It is in the village
of Astaffort, close to the Armagnac region and a few miles from
Agen, that you will find Une Auberge en Gascogne.
It was certainly not by chance nor by luck that Fabrice Biasolo
was chosen to be member of the Jeunes Restaurateurs d’Europe
association by his peers…
This story is about
a great forest, property of the Abbey de l’Epau, covering our
region. In this forest, the monks had employed lumbermen from
the Savoie region.
It was hard work for these men, and they
needed nourishing food… Their main meal was composed of a sort
of omelette with potatoes and bacon, a recipe from their mountains.
The called it “Mat la faim”, or “hunger killer”, and with an
accent from Savoie, the result would be something like «
Mat la Fan ». Several centuries went by, and words, just
like places, changed or disappeared.
The forest disappeared
and “Mat la Fan” became “Mattefeux”. Alain Souffront was inspired
by this old story when picking a name for his restaurant; he
chose a symbolic one and called the place « Auberge des
Matfeux » in 1962.
This young talented Chef
welcomes you in his atypical restaurant, a former relay from
the 19th century, completely renovated.
L’Auberge en Gascogne is unmissable for true gourmets who are
on the lookout for unusual flavours and unexpected mixes. In
this village restaurant, the past mixes well with the modern.
When the weather allows, the terrace will welcome you, opening up to the yard.
In these simple, unpretentious settings, decorated carefully
and with taste, you will find a cuisine of tradition and innovation
that will no doubt surprise you.
A beautiful cuisine from the
region, fresh and refined, respecting flavours, harmonious and
festive.
It is in fact an authentic type of cuisine, charming, personal
and sensitive, just like the Chef.
Our ideal gourmet menu is meant as a discovery of the establishment’s
specialties and was composed as such by the Chef, nothing is
missing.
This should allow you to work up an appetite…
