At Le Grand Ecuyer,
on the heights of Cordes-sur-Ciel, a city of history, you will
be welcomed according to traditions…
and that is rather
natural, for why change something that works so perfectly well,
that has welcomed the rich and famous for a long time now?
The establishment
used to be the hunting house of the comtes de Toulouse, the
monument was classified as historical by Prosper Mérimée;
more recently we know that Albert Camus liked writing here,
that the Général de Gaulle appreciated the place
and that former president Pompidou was a regular.
According to traditions it is then, in a very pleasant classical
décor where you will enjoy a kind of cuisine that likes
to innovate; it is the original work of Yves and Damien Thuriès
you are about to discover.
Yves-elected Meilleur Ouvrier de France-in total harmony with
Damien-member of the Jeunes Restaurateurs d’Europe association,
taught by the greatest Chefs-have come to the conclusion that
innovation is the key to success in a time where permanent changes
are the rule.
To that purpose, they have developed the concept of trilogy
cuisine!
New original principle,
allowing you to taste three dishes on the same plate; very original,
